Alfalfa microgreens are the young seedlings of the alfalfa plant. Start by soaking alfalfa seeds in water for 8-12 hours. Spread seeds thickly over a thin layer of moist potting mix (1/2-1 inch of soil) in a well-draining shallow container. Press them firmly into the soil. Mist them with water and cover to block out the light. Place the container in a completely dark place. Mist as needed to retain the moisture during this time. In 5-6 days, when there is a few inches of growth, place the tray under direct light. Harvest with scissors in 8-12 days.
