Tomatillo is a relative of the tomato but is a distinct vegetable. They have been a staple in Central American cuisine for a long time. Tomatillo fruits are known for their acidic, citrusy flavor with a pleasant tang. The plants grow yellow flowers that attract pollinators, contributing to the garden’s biodiversity. Growing tomatillos is rewarding, allowing you to grow and create salsa verde from fresh, homegrown vegetables. Adapting well to various climates, they can be cultivated in USDA hardiness zones 5 to 13. In hotter, tropical areas without frost, tomatillos can be grown perennially outdoors.
Start tomatillo seeds indoors, 6 to 8 weeks before the last expected frost, or sow them directly in the garden in spring when the soil has warmed. Plant seeds about 1/4 inch deep and maintain even soil moisture until germination, which is usually within 2 to 3 weeks from planting. Once seedlings are strong enough, thin or transplant them 18 to 24 inches apart in a spot with well-drained soil and lots of sunshine. Plants need room to grow and enough air circulation around them.
Tomatillos will be easy to maintain. If possible, place them in a sunny spot, but they will tolerate some shade during the day. Make sure to water regularly, especially during flowering and fruiting stages. Tomatillo fruit is ready for harvest when it’s firm and has filled the papery husk. The husk should be removed before cooking or eating.
