Artichokes are native to the Mediterranean region and have been cultivated since ancient times for their tasty buds. They also are lovely ornamental plants. Artichokes are suited to mild climates without frost, but they can be grown in cooler areas too, with the right care. Artichokes grow successfully in USDA hardiness zones 7 to 11, producing flowers for several years once properly established.
Start by planting artichoke seeds indoors, about 2 to 3 months before the last expected frost. Plant them 1/4 inch deep in soil. The seedlings should go outside only when the soil has warmed. Space them 3 to 4 feet apart as they need room to accommodate their large size at maturity. In cooler regions, artichokes are grown as annual plants. Some varieties will mature fast enough to harvest in the same year.
Artichokes require regular watering. Water helps them develop large buds. Mulching is strongly advised to assist in retaining soil moisture and controlling weeds. Artichokes are quite heavy feeders, so keep that in mind when planning their cultivation. They are typically ready for harvest before the buds are fully open but are firm and well-sized.
