Clover microgreens, or micro clover, are young shoots of the clover plant. They hold great amounts of nutrients, such as vitamins A, B, C, and K, along with essential minerals and proteins. Clover microgreens are harvested short after the first true leaves have developed. These indoor plants add a subtle flavor of sweetness to dishes, enhancing their taste.
Sprinkle clover microgreens seeds thickly over 1/2-1 inch of moist potting mix. The best results will be in a well-draining shallow container, about 5 inches by 5 inches in size. Press the seeds in firmly. Mist with water and cover the container to block out any light. Set inside a completely dark space, and keep covered and in darkness for 3-5 days. Mist the seeds as needed to retain their moisture. When there are a few inches of growth or when microgreens begin to lift the cover, expose them to direct light. Harvest with scissors in 8-12 days.
