Kale microgreens are the young seedlings of the kale plant, harvested soon after the first true leaves have developed. These kale sprouts have all the health benefits of mature kale, in a concentrated form. Growing kale microgreens is an easy way to access organic greens. They provide continuous harvests that complement a healthy lifestyle.

PLANTING KALE MICROGREENS SEEDS

Spread microgreen kale seeds evenly across a shallow tray filled with a fine soil mix or coconut coir. Press seeds gently into the medium, mist them with water, and cover them. Leave them in a dark place for about five days. Once an inch or two of growth appears, place the tray in an area with bright light or under a grow light to allow the leaves to develop color.

MAINTAINING KALE MICROGREENS

Harvesting kale microgreens can begin as soon as a week to two after planting. Harvest kale microgreens when they are 2 to 3 inches tall. Cut them just above the soil line. Use the fresh microgreens immediately to maximize their nutritional benefits and flavor.

How to Grow Microgreens

The general process of growing microgreens is fairly simple. The steps are as follows:

  1. Pre-soak seeds as specified on the packet
  2. Sprinkle seeds over a tray with a 1/2" to 1" layer of moist potting mix. Press into the soil to ensure good contact.
  3. Mist seeds with a spray bottle and cover to maintain moisture and block out light.
  4. Keep seeds covered for the blackout period. Setting the tray inside a cupboard works well. Check seeds during the blackout period and mist as needed to keep seeds moist.
  5. When the microgreens are a few inches tall or begin to live the cover, expose
    them to light, allowing the seedlings to develop and grow.
  6. When microgreens look ready, harvest with a pair of scissors and enjoy!
