Rhubarb has been cultivated for its medicinal properties for a long time. Later, it became a culinary favorite, especially in sweet dishes where its tartness is combined with sugar. Rhubarb is best suited for USDA hardiness zones 3 to 8, where it can be a lasting fixture in the garden for a decade or more.
Soak seeds for a couple of hours before planting to improve germination rates. Start rhubarb seeds indoors in early spring 8-10 weeks before the last frost, or plant them directly in the garden in late fall for germination the following spring. Plant seeds 1/4 inch deep and keep moist until they germinate, which can take 14-21 days. Transplant young plants outdoors, spacing them 3 to 4 feet apart. Place them in a location with plenty of sunlight.
