Mustard Greens, belonging to the Brassica family, have bold flavors, ranging from from spicy to tangy. Native to the Himalayan region of India, these greens provide high doses of vitamins, such as A, C, and K, along with antioxidants and fiber. The cultivation of mustard greens dates back centuries. They have since become a global ingredient in cuisines, adaptable to different climates, and growing well in USDA hardiness zones 2 to 11.
To successfully grow this simple leafy green veggie, start indoors 6-8 weeks early or directly sow the seeds in the garden, 3 to 4 weeks before the frost ends. You can also sow them in late summer for a fall crop. Plant seeds 1/4 inch deep and space the plants according to the needs of your chosen variety as indicated on the back of your packet. Mustard greens that are kept evenly moist germinate quickly, usually within one week.
Mustard greens are quite easy to maintain. They require regular watering to keep the soil moist and productive for flavorful leaves. A layer of mulch improves soil moisture retention and suppresses the weeds. Harvest the outer leaves as needed to allow the plant to continue producing more.
