Lovage, scientifically known as Levisticum officinale, is valued for its aromatic leaves, stems, and seeds. They enhance the flavor of various dishes. Beyond its culinary uses, lovage has been traditionally used in medicine, including aiding digestion. Native to Europe and southwestern Asia, lovage is adapted well to cooler climates. It can be successfully grown in USDA hardiness zones 3 to 9.
Start lovage seeds indoors, 6 to 8 weeks before the last frost, or plant them in the garden directly in spring or fall. Plant seeds 1/4 inch deep, and keep the soil consistently moist to facilitate germination. It typically starts within 2 to 3 weeks. Once they are strong enough, transplant seedlings to the garden. Space them 24 to 36 inches apart to accommodate their size.
