The gillyflower, as it is also called, has a sweet, spicy fragrance and taste. They are lovely as cut flowers in arrangements, and a marvelous addition to home gardens. Hoary Stock, or Matthiola incana, is cherished for its sturdy spikes of dense flowers. This plant’s ability to bring an amazing fragrance and beauty to gardens is the reason it is so beloved. Stock flower has a rich scent which is most pronounced in the evening. Its flowers are edible, and a part of the cabbage family. For this reason, they are used as garnishes to add color and sweet taste to meals. Coming originally from the Mediterranean, this plant adapts well to many temperate climates. It is successfully grown in USDA hardiness zones 7 to 10.
When frost is over in springtime, plant Hoary Stock seeds directly in the garden. They can also be started indoors, 6 to 8 weeks before the last frost. Because they need darkness to germinate well, barely cover the seeds with soil. Place them in a sunny location with good air circulation. In 10 to 14 days, they should start sprouting.
Hoary Stock plants will be easy to care for. Regular watering is needed for optimal flowering, and a spot with sunshine for at least part of the day. Prior to planting or during their growth work some organic matter in the soil to encourage abundant flowering. Remove spent blossoms to aid in more blooming during the season.
